    SERVES 2-4

    • 50g recent flowering currant blossoms
    • 200g high-quality uncooked honey
    • 2-3 sprigs wild thyme
    • Pinch of sea salt

    The floral sweetness of currant blossoms paired with wild thyme creates a fragile honey good for drizzling over recent ricotta or stirring into tea. Choose the blossoms on a dry morning once they’re most aromatic.

    Gently shake the currant blossoms to take away any bugs, however don’t wash them – you need to protect their delicate nectar. Place them in a clear jar with the thyme sprigs.

    Heat the honey in a small pan over very low warmth till it simply turns into liquid – you need it barely heat, not scorching. Add a tiny pinch of salt.
